Benedictine abbess and emblematic woman of her time (1098-1179), Hildegard of Bingen marked throughout Europe by its influence in the political, feminist, musical, philosophical and medical.
His teaching is the Western equivalent of the Indian Ayurvedic or traditional Chinese medicine. Famous in Northern Europe, Hildegard is increasingly known in France.
Use
For a plate, make a roux by mixing 1 tablespoon and a half of butter with 1 tablespoon and a half of soup (10g).
Add 250ml of cold water, stir and heat until simmering. Then simmer over low heat for 4 minutres.
For a more gastronomic result, sauté fresh mushrooms, onions and garlic chopped with butter before linking in red. Add the chopped parsley on the plate before serving.
